Castel Gandolfo
‘ngredienti
1chilo de farina 00, 8 ova, burro, mezzo litro de latte, 600 gr. de zucchero, lievito de farmacia (cremoere de bicarbonato), limone e arancio grattato
Ingredients
Flour (1kg), 8 eggs, butter, ½ litre of milk, sugar (600 grams), baking powder, grated lemon and orange peel
Pizza Margherita
Metti er burro a bagnomaria ne l’insalatiera. Vèrsece ‘o zucchero,poi ‘n’ovo pe’ vorta e ‘ntanto gira co’ ‘a frusta.
Mettece ‘a farina ‘npo’ pe vorta e pure er latte e er burro sciorto.
In urtimo ce metti o lievito, o limone e l’arancio grattato. Pia ‘ntegame de rame e versece tutto e fa’ coce pe’ ‘n’ora.

Pizza Margherita
Melt the butter in a bain-marie, add the sugar, the eggs (one at time), the flour, and the milk; then add the baking powder and the grated lemon and orange peel.
Bake it for an hour.

Pajata de vitella tenera, patate, rosmarino, se piace finocchio, sale, pepe, ojo d’olivo (spremuta)
Ingredients
Entrails of calf, potatoes, rosemary, fennel, salt, pepper and olive oil
‘A pajata co’ e patate ar forno
Pia ‘a pajata spèllela, tàjela, fàlla tutta a ciammelle e mèttela’ dentr’a spasetta e condiscela co’sale, pepe,ojo e mittece no poco de finocchio o de rosmarino. Capa ‘e patate, fàlle a tocchi e condiscele. Mischia tutto e ‘nfòrnalo.
Quann’è bene rosolito, màgnatelo callo e ce bevi er vino de i Castelli.

Roasted pagliata with potatoes
Prepare the entrails of calf, cut it into pieces, put it in a roasting pan and add oil, salt, pepper, fennel and rosemary. Peel and cut the potatoes and put them around the entrails. Roast it.

Capretto a pezzi, ojo, sale, pepe, vino bianco, ova, limone
Ingredients
Kid, oil, salt, pepper, white wine, eggs and lemon
Capretto sbrodettato pe Pasqua
Pia ‘ntegame de coccio, mèttece er capretto a pezzi, condiscelo bene co’ ojo, sale, pepe e fa’ rosolà.
Mettece pure ‘npo de vino bianco e portalo a cottura. Alla fine sbatti l’ova co’ er limone e buttacele dentro e se forma ‘na specie de crema.
Smorza er foco e servilo callo.

Kid "sbrodettato" (Easter's dish)
Put the kid cut into pieces in a casserole, after adding to it oil, salt and pepper.
Sauté it with white wine. Beat the eggs with the lemon, and add this sauce to the kid.
