Frascati Superiore d.o.c.
The Frascati Superiore doc is produced from selected grapes coming from Campo Vecchio and Valle Marciano. The must obtained from softly pressing the grapes with a pneumatic press ferments according to a thermo-controlled procedure using particular refrigerators. The wine is then filtered and matures for a period of three months. It is then newly filtered and refrigerated at a temperature of 5 °C.
Vineyards:
Malvasia puntinata del Lazio, trebbiano, Malvasia di Candia.
Soil:
Campo Vecchio and Valle Marciano (400 meters above the sea level). The wines are cultivated in rows, with the spalliera, cordone speronato and tendone methods. Middle age of vines: 25 years.
Organoleptic analysis:
Colour: pale yellow.
Scent: flowers and fruits.
Taste: full, harmonic and persistent.
Alcoholic grades:
12°.
Foods:
Delicate foods requiring a delicate well structured wine. It has to be served at a temperature of 12-14° C.
Castelli Romani Bianco d.o.c.
It is obtained using selected grapes of the quality Trebbiano and Malvasia puntinata del Lazio. Their vintage takes place at the end of September – beginning of October. This wine is the result of a white fermentation (without peels) of the must.
Vineyards:
Trebbiano and Malvasia puntinata.
Soil:
300 meters above the sea level. It is cultivated through the following methods: filetti, tendone and pendolino. Middle age of the vines: 25 years.
Organolpetic analysis:
Colour: pale yellow.
Alcoholic grades:
12°.
Foods:
With fish and white meat. It has to be served at a temperature of 13°C.
Chardonnay del Lazio
The wine is obtained from Chardonnay grapes cultivated in Lazio and harvested during August. The thermo-conditioned fermentation permits to obtain a wine rich in scent and flavour.
Vineyards:
Chardonnay.
Soil:
200-400 metres above the sea level. It is cultivated through the following methods: filetti, tendone and pendolino.
Organolpetic analysis:
Colour: golden yellow.
Alcoholic grades:
12,5°.
Foods:
Second courses (delicate). It has to be served at a temperature of 13°C.
