| Description |
During the first years of the 80’s Piero Costantini bought in Monte Porzio Catone the vineyards which belonged to the Cardinal Pallotta in an area which can be considered the heart of the Frascati wine’s production.
The first thing he did was to replant local kinds of vines (Bombino, Cacchione, Malvasia del Lazio) even if he had to sacrifice more productive varieties (Malvasia di Candia and Trebbiano), that however were characterized by an inferior quality. He cultivated these new plants following a particular method called “controspalliera” pruning them by leaving short branches (guyot, casarsa, cordone speronato) and drastically reducing their production.
During a second period the whole cycle of vinification was renewed giving greater importance to the technology based on cold temperatures. At present this company, located near the archaeological area of the Tuscolo can be considered an up to date company from a technological point of view. It is possible to visit the company and to taste its products; personnel speaks French and English. It is also possible to buy packages to take away products. Do not forget to visit the caves belonging to this company.
